For the dough or crust you will need:
1/2 Kilo of leavening flour or yeast flour.
1/2 Kilo of whole flour.
For the filling of this lemon pie for vegans you will need:
420 ml of water.
300 gr. of sugar.
100 ml of freshly squeezed lemon juice.
100 gr. of cornstarch.
30 gr. of vegetable margarine.
For the cream you will need:
100 gr of cornstarch
50 gr of vegetable margarine.
1/2 teaspoon of the liquid vanilla essence.
Vegetable dye yellow, preferably.
You will start assembling the crust and to do it you only have to mix each one of the ingredients of that part, you will make a table that you will distribute evenly in the mold where you prepare the base.
Remember that you have to leave the edges of the base a little high to be able to fill. Before putting the crust in the oven you have to prick some parts so that the dough will not swell too much when cooking.
You will put the crust in the oven over medium heat and remove when you see the golden mass on the surface.
While you have the crust in the oven you can prepare the stuffing of your base, to make the filling you will use a pot, preferably small, and you will mix the starch with corn, sugar, water and freshly squeezed lemon juice; You can all this over low heat and slowly stirring constantly until the mixture is firm and very thick.
Once your mix is ready, remove from the heat and add the vegetable margarine, stir the margarine throughout the mixture of the filling until it has completely dissolved.
